Breakfast Tacos

 1 Goolsby's Sausage Patty per Taco
 1 Egg per Taco
 Avocado

In a pan, brown and crumble your sausage patties until thoroughly cooked.

In a separate pan, combine eggs and 1tbsp of butter per egg.

Whisk eggs vigorously on heat for 10 seconds, then off for ten seconds. Repeat the same process until the eggs are a fluffy, soft scramble.

Cut one avocado into slices.

For Pickled Red Onions (make at least 1 day in advance)

Thinly chop one red onion.

Boil 3-4 cups of water.

In a bowl combine 2 Tbsp of sugar, 1 tsp of salt, ¾ cup of apple cider vinegar, and peppercorns.

In a separate bowl pour boiling water over red onions until all submerged. Let sit for 5-10 mins.

Drain water from onions and put into a jar.

Add the remaining water to a bowl with sugar, salt, and vinegar. Then pour pickling mixture on top of onions and seal.

Refrigerate after cooling.

Finally, assemble the taco to your liking!
