Stovetop Sausage Mac & Cheese

 1 lb Goolsby's Sausage
 ½ Onion, Chopped
 1 Can (14.5-ounce) Fire-Roasted Diced Tomatoes
 2 cups Water
 ½ cup Half-and-Half
 1 Package (8-Ounce) Macaroni Pasta
 2 cups Shredded Cheddar Cheese
 Salt and Pepper

Place Goolsby's Sausage and onion in a large nonstick pan over medium-high heat. Cook, breaking sausage apart with a wooden spoon, until sausage is no longer pink.

Add diced tomatoes, water, half-and-half and macaroni pasta. Cook, stirring frequently for 12 to 14 minutes.

Season to taste with salt and pepper, keeping in mind that the cheddar cheese will add some saltiness.

Sprinkle cheese on top and stir until melted and mixed in. Remove from heat.
